Sora, a stylish Japanese rooftop restaurant and lounge at Park Hyatt Doha, has announced the joining of Chef Edwin Sta Ana as the new Head Chef, and the launch of a new a la carte menu offering exquisite new dishes with a twist on classic Japanese recipes.

Hailing from South Africa, Chef Edwin Sta Ana began his career at Yo Sushi in Johannesburg. He continued his culinary career as Chef de Partie at Cape Town’s The Tank. In 2009, he started at Nobu, Cape Town as a Sushi Chef and proceeded to help open Nobu restaurants in Manila and London. After leaving Nobu, he supervised the opening of restaurants at the Ritz Carlton in India and Sheraton in Bangladesh. Since then, he accumulated over 20 years of culinary experience, having held senior chef roles at luxury hotels and award-winning restaurants in 6 countries and 3 continents.

When crafting his dining experiences, Chef spectacular Edwin focuses on introducing Japanese delicacies and masterpieces that are elegantly presented and prepared using the best, freshest ingredients between the cultures to create a truly unique flavor. Chef Edwin’s new appetizers include Japanese style hummus, an exciting blend of tastes crafted with chickpeas, miso, sesame oil, and sago crisps. The appetizer menu also includes a selection of distinctive creations such as Seafood Ceviche with Miso and the sizzling Sora Wagyu Bao Buns.

The menu brings the heat in its main courses specifically the Robata dishes, with signature creations including the Blue Ocean Prawn Tempura, the Wagyu M5 Beef Tenderloin Yuzu Kosho, the 72-hour Miso marinated Black Cod, and the Tonkastu Chicken Ramen. Sushi lovers can enjoy a wide range of freshly prepared Sashimi, Nigiri, and Maki Rolls.

The menu also features a selection of special salads made with the freshest ingredients, such as the Balik Salmon Salad with Shaved Root Vegetables, and a range of desserts to cap off a nice meal, including favorites such as the Garden of Zen and Choco Coco.

Furthermore, Sora announced the return of its much-anticipated Sora Sky Brunch. With an epic 21st floor panoramic terrace overlooking Doha’s skyline, Sora offers a delectable Japanese sharing-style menu, special beverages, and live DJ entertainment, every Friday from 12.30pm to 4pm, starting from QR275 with soft beverages and QR399 with enhanced beverages.

Guests can also indulge in the special “Sora San Setto” sunset hours and enjoy the sundowner menu with special prices from 4pm to 6pm.

Perched 21 floors above Msheireb Downtown, Sora features an outdoor dining terrace that offers Doha’s best views, boasting an ultra-modern space where guests can share small plates and enjoy the unique culinary art of Robata. In Japanese cuisine, Robata refers to a method of cooking, similar to barbecue in which food items are cooked at varying speeds over hot charcoal.
